Potato patty

3 large potatos
1 red onion
1 egg
1 bunch coriander
3 tbs Potato starch

Vegetable oil

Directions:

Boil potato in a saucepan until soft, drain and remove skin and mash
Chop onion finely and shallow fry in oil until soft
Chop coriander and mix into potato, beat egg and add salt and pepper. If too mushy add 2 tbs potato starch
Make into tbs size pattys  and shallow fry on medium heat until brown on both sides.

You can also make them smaller into balls for party appetisers.

When i was little, my dad got a job for a year on Norfolk island . We had tropical fruits galore and much of my earliest memories are from this beautiful place. We had many of the red guavas growing in our backyard. Now mum has a guava tree growing here in Sydney with the yellow variety and the pink insides. There are some ripening on my kitchen bench right now and my 4 year old loves them. As  a Naturopath he is a dream child when it comes to eating. I’m so happy that he gets to eat fruit straight from the tree as i did.

Heres a few guava recipes

GUAVA JELLY SQUARES

Ingredients

1 can Coconut milk

3 tbs Agar Agar powder

3 tbs Agave Nectar or sugar or sugar substitute

¾ cup fresh Guava deseeded

¼ cup filtered water

_AAA0235To make the Guava juice, top and tail and deseed the Guavas. Blitz in a blender with the water and set aside.

Add coconut cream, agave and agar powder to a saucepan. Bring to a boil and then lower heat to simmer for around 5 minutes, stirring regularly.

Take off the heat and add the guava juice and stir through.

Pour into a dish (Square or rectangle is best)

_AAA0239Leave to cool and set. Cut into diamonds or squares.

Nb: It will be much firmer than normal jelly and easy to pick up with your fingers.

Nb Agar Agar is a seaweed gel which melts and dissolves when heated and hardens on cooling. It is a vegetarian substitute for gelatine.

You can buy agar powder in the Asian grocery stores.

Ingredients for cupcake

¾ cup coconut flour

1 cup gluten free self raising flour

½ cup butter or coconut oil

3 tbs stevia granules

3 tbs agave nectar

¾ cup fresh guavas

½ cup pineapple

4 eggs

Ingredients for Icing

Method

Preheat the oven to 180c and line a muffin tin with 12 cupcake liners.

Wash, cut and deseed your guavas and set aside, (I just top and tail, slice in half and scoop out seeds with a teaspoon)

Chop fresh pineapple (or tinned) into small pieces and set aside

Separate your eggs, the whites in one mixing bowl and egg yolks in another.

Beat the egg whites until fluffy and set aside.

Blend together your egg yolks, butter, agave nectar and guavas until combined.

Add your coconut flour, self raising flour and stevia and mix through by hand or mixer._AAA0198

Lastly, fold in your egg whites by hand .

Spoon batter into cupcake liners and place in the oven for 25 minutes.

Leave the muffins to stand and cool and then it’s icing time!

GUAVA POPSICLES

These are delicious. This a great summer treat for any age.

Ingredients

1 part Fresh Guava

1 part Guava nectar

First make the guava puree by taking fresh pink flesh guavas, topping and tailing and deseeding them (I use a teaspoon to scoop out the seeds)

Blend ¾ of fresh guava with ¼ cup water until pureed and add in the guava nectar and blend.

Pour the liquid into popsicle molds and freeze.

 

GUAVA COOKIES

Guava cookieUsing fresh guava pureed is a great way to add in some nutrients and fibre.

Prep and cook time – 40 minutes

Yields approx 12-14 cookies

Ingredients

¼ cup plain gluten free flour

½ tsp salt

½ cup organic unrefined coconut oil

½ cup brown sugar

1 egg

1 cup fresh guava puree (If you don’t have access to fresh guavas, you can use guava nectar instead but reduce the brown sugar by ½ and increase the plain gluten free by ½ cup.

Preheat the oven at 190C

Line a baking tray with baking paper

Blend ¾ of fresh guava with ¼ cup water until pureed and set aside.

Combine all dry ingredients in one bowl , whisk one egg into the dry ingredients and then melt the coconut oil in the microwave and add. Lastly add the guava puree combine and mix through.

*If you want to make the cookies a bit pinker, you could add some beet powder or freeze dried berry powder. Nb; They will be less pink after cooking so add more for a nice effect.

Drop spoonfuls of mix onto the baking tray and flatten with a spoon dipped in warm water as the mixture is very sticky.

Into the oven for 20 minutes or until dough is cooked through.

Cool on a rack and enjoy.

You could add dried cranberries or some nuts or a cherry on top to jazz them up.
