Introducing the fuji fruit!
Something you have probably seen in the fruit store but perhaps haven’t discovered how to enjoy them yet.



The Fuji Fruit is also known as Persimmon and is native to Japan and China. It’s botanical name is Diospyrus which means ‘Fruit of the Gods.They have a bright orange skin and orange flesh which is very sweet.

Fuji Fruit ripens at room temperature and it can be chopped into segments and eaten or added to salads or smoothies. It really comes from the berry family and therefore it’s nutritional profile is similar. It contains some antioxidants and beta carotene and lycopene which are protective to our bodies cells through preventing oxidation. It also contains vitamin C and Calcium, Iron, Phosphorus and Manganese.

Fuji Fruit /Persimmon Salad

Prep/Cook time 15 minutes

Easy, delicious and healthy.
The dressing compliments the sweetness of the fuji fruit


3 Fuji fruit/Persimmon

3 cups Rocket greens (Arugula)

150 g Feta

½ cup Walnuts


4 tbs Apple cider vinegar

4sp Agave nectar


Wash the rocket and assemble on 4 plates or into one big salad bowl.

Chop the Fuji fruit into segments and place on top of the Rocket. (You can peel the skin first if you think it’s too tough.)

Crumble the feta over the top and sprinkle on some walnuts. (If you like you can lightly toast these in a pan.

Measure out the apple cider vinegar in a small bowl or jar and mix in the agave nectar. You can combine with a spoon or put a lid on the jar and shake.

Dress the salad on serving.
