Sweet potato toast with peanut butter and pomegranate.
This little gem of an idea is doing the rounds on grain free cooking sites at the moment.
Swap out your grainy toast for a yummy alternative of sweet potato slices.
There are endless possibilities of toppings but I’m featuring a particularly good suggestion from an article on mindbodygreen.com which is Peanut butter and pomegranate.
Ingredients
1 Large Sweet Potato
Peanut butter
1 Pomegranate
Method
For a toaster
Slice your sweet potato in 3-4mm thickness lengthways and pop in the toaster.
It may take 2 rounds to get it cooked through.
Spread a generous amount of peanut butter (or tahini) and sprinkle pomegranate seeds on top
Enjoy!
For oven
Slice your sweet potato in rounds 1 cm thickness and heat in the oven at 180C for 7min each side. You can use a little coconut oil glaze to speed the cooking.
