Fuji Fruit Smoothie

Fuji FruitSmoothie

This smoothie is simply delicious. If you haven’t tried Fuji fruit before, this is a wonderful introduction to this fruit. It may look like a tomato but its surprisingly super sweet flesh will have you looking forward to seeing them come into season each year.

Ingredients

1 Ripe Fuji Fruit

1 Banana

½ tsp Ginger powder

½ tsp in Cinnamon powder

½ cup Plant based milk (I used soy)

Directions

Chop the top of the fuji fruit to remove the leafy end.

Use a spoon to scoop the flesh out and chop into rough pieces and put into the blender.

(If your fruit is too firm you can peel the skin off with a peeler)

Peel and chop your banana and add to the blender.

Pour in your milk and add the spices.

Turn on your blender until all ingredients are processed and combined.

Pour into a glass and drink immediately.

 

Fruity Muffins

These muffins are super easy and tasty.

I love the persimmon (fuiji fruit) to add moisture, sweetness and texture to these gluten free delights.

Fuji Fruit/Persimmon Salad

Ingredients

2 cups self raising flour (gluten free)

2 eggs

Butter (or coconut oil)

¼ cups milk

1/4 cup coconut sugar

1 ripe persimmon (fuji fruit)

1 ripe banana

1 apple

¼ cup Sultanas

3 tbs Sunflower seeds

3 tbs Pumpkin seeds

Makes 12 cupcake sized muffins

 

Instructions

Preheat the oven to 180C

Line a muffin tin with patty cases.

Chop the apple into small cubes and set aside

Mash the banana in a bowl.

Add the soft butter or coconut oil, milk, sugar  and eggs and persimmon flesh.

Add the self raising flour and stir through well.

Add sultanas, sunflower seeds and pumpkin seeds and stir through.

Pour the muffin mix into patty cases and transfer to the oven to bake for 15-20min

 

 

 

Frozen Yoghurt

Banana and strawberry frozen yoghurtBanana, Strawberry Frozen Yoghurt is a quick and simple dessert or snack.

This one is great for the kids. No worrying about time. This treat is ready in less than 5 minutes. Whenever the strawberries are in danger of spoiling or the bananas in the fruit bowl have seen better days, I quickly transfer them to the freezer for calling upon for a recipe such as this. With the fruit already frozen, all I need to do is add a little yoghurt to the mix, blend and serve.

I think there is enough sweetness to tempt young taste buds from the fruit alone but you can always add a little honey to taste.

Ingredients

2 Frozen Bananas

1 Cup Chopped Frozen Strawberries

½ cup Greek yoghurt

Method 

Peel and chop your frozen bananas (if you didn’t do this before you froze them)

Add them to the blender along with the frozen strawberries.

Add the greek yoghurt.

Process until you have the consistency of frozen yoghurt.

Serve immediately.

Topped with fresh strawberries, nuts or granola.

A quick, easy and healthy chocolate fix. This is one of my favourite go to post exercise smoothies.

Ingredients

1 Banana frozen

½ an Avocado

1 tbs Cacao powder

½ cup Soy milk

_AAA0591Pour the soy milk into the blender and add the remaining ingredients.

_AAA0589Process to a thick liquid and consume immediately for maximum nutrient value.

If you are looking for a satisfying snack which happens to be dairy, egg and gluten free, this is the cookie for you.

Ingredients

1 banana

1 cup dates

1 cup sunflower seeds

1/3 cup tahini

5 tbs dried cranberries

4 tbs coconut flour

1/2 cup water

 

Method

Preheat the oven to 180C

Line a baking sheet with baking paper.

Process the sunflower seeds to chop them into smaller pieces but not completely to powder.

Pour into a mixing bowl and add coconut flour and mix though.

Combine the banana, dates, tahini and water in the food processer and blend.

Mix the wet ingredients with the dry in the mixing bowl.

Fold through the cranberries.

Take spoonfuls of the mix and roll into a ball and place on the baking sheet.

Flatten slightly as they will not spread out in the cooking process.

Transfer to the oven for for 12-15min.

Allow to cool and then enjoy.

They can be stored in a container for a few days.

 

Banana Chocolate Ice blocks

With only 3 ingredients and no added sugar this is a great healthy summer treat for the kids.

The raw cacao powder adds a great chocolate flavour and is full of great antioxidants. There is natural sweetness from the bananas and protein from the soy milk.

Ingredients

1 cup frozen banana

1 cup soy milk

3 tsp cacao powder

 

Blend all the ingredients together.

Pour into ice block molds and freeze._AAA0402 (2)
